Haris Kandiloros, started his career as an Endocrinologist Doctor and editor of the University of Nancy where he taught cell biology. He worked for a few years in Greece and continued in France as director of the nutrition clinic Les Jonquilles in Normandy, in the field of endocrinology, metabolism and obesity. He has returned to Greece where he lives and works in his private practice and in clinics such as Endocrinologist, Diabetologist, Nutritionist.

A few words about the book: In the 1st part you will find the recipes. 29 for entrees, 18 for desserts, 1 for bread and three for drinks. These are usually already known recipes for everyday foods, but a little "teased", i.e. enriched with some ingredients with a special content of antioxidant substances. Each one has a color photograph taken by either the father or the son at the time of the "cooking". In each one, the ingredients needed to make it, the method of preparation, as well as the utensils in which it should be served are described in detail because aesthetics also play an important role. The antioxidant substances present in each food item are also accurately stated. The recipe most often closes with a couplet of medieval folk poetry or a quote from 18th century dietetic books.

The 2nd part is a small encyclopedia of 110 basic foods. Almost all vegetables that one can find in Greece, legumes, grains, nuts, seeds, fruits, dried fruits, some herbs, sweeteners, chocolate, coffee, kefir and mastic . Each one has general information and its exact antioxidant content. Reference is also made to the use of the food in ancient Greece or the moment it was introduced from Mesoamerica. If it was known to the ancients, 3-4 passages from ancient texts are listed that certify it and their translation.

In the 3rd part, the 66 most important antioxidant substances and the foods in which they are hidden are listed alphabetically. This piece is more scholarly but is also the rarest because it contains the essence of reading 1,700 scholarly articles by the author. The 300 most important bibliographic references are even listed in references at the bottom of the page. This content does not exist anywhere else, not on the internet, not in books.
